Chicken Barley Stew with Herbs (serves: 8).6 oz barley. 2 bay leaves. 2 tablespoon's butter. 2-3 lb chicken breasts on bone. 4 fine chopped garlic cloves. 1 lb leeks (3-4 large ones, 4-5 little ones) thickly cut. 1 tablespoon dried sage. 3 tablespoon's red wine vinegar. 3 three-quarters cups water. | Using large Dutch-Oven: melt butter, then fry leeks and garlic in butter. Add chicken and brown. Add remaining ingredients, reserving sage. Bring until boiled, then reduce, simmer between 1 and 11/2 hours. Remove chicken from pot and cool. Remove meat from bones and put them back in pot. Add sage. |
