Summer Pudding1 lb mixed red soft fruits. 4 oz sugar. Make enough white bread for lining your pudding basin. Whipped cream for serving. | Trim crusts off bread and line pudding basin with this, cutting circle inside base. Ensure basin remains lined without any gaps. Cook fruits and sugar without adding extra water, for few minutes until these juices run. Drain fruits and retain juices. Fill lined bowl with fruit and place circled bread on top, enclosing fruit. Put plate on top held down with some weight on top. Place in fridge overnight. When ready for serving, turn out onto plate and pour reserved juices over top. Serve with whipped cream. |
